This apple cake is a favourite supplied by Gemma from the Tui Team. With a touch of spice from the cinnamon it makes the perfect morning or afternoon treat. Serve warm with custard in the winter or with yoghurt and ice cream in the summer.
Ingredients
- 2 eggs
- 1/2 C sugar
- 125g melted butter
- 1 C self raising flour
- Rind of 1 lemon
- 3 apples, peeled and chopped up
- Cinnamon and sugar for sprinkling on top
Note this cake is baked in a ring cake tin - a cake tin with a tube up the centre to leave a hole in the middle of the cake.
- Turn oven onto bake 180 degrees celsius
- Beat the eggs and the sugar
- Melt the butter, cool and add to the eggs and sugar
- Add the self raising flour, lemon rind and apples to the mixture and mix to combine
- Pour into a greased ring cake tin
- Sprinkle with a generous amount of cinnamon and sugar
- Bake for 30-40 minutes

I once had a microwave recipe called "Apple Sauce Spice Cake" that used stewed apple cinnamon etc, and because it was always at hand it was lost the recipe in a kitchen fire. I have searched for the recipe in every book I could find, without success. It was made in a ring tin and cooked for only 12 minutes, but I cannot remember the details of the recipe. I'd love someone to produce a similar recipe again. Please.

I have a similar recipe and use a round tin with no hole works fine I use 5 apples which gives it even more apple flavour, and put 1 teaspoon mixed spice and 1 teaspoon cinnamon in the cake, also going to try this recipe. I am always being asked to make this apple cake recipe yummy.

Hi Edna I don't have a ring tin either. I grease up a jar (butter, oil or whatever suits) and pop it in the middle of a round tin. You'll need to be a bit careful as you spoon in the mixture, but it's not too tricky. Saves buying a ring tin and works beautifully. Wait for ten minutes or so before taking out the jar. Now I'll have to try that with this recipe!

You can use a plain round tin for most recipes calling for a ring pan - just use a small empty tin can (with the paper removed) in the centre of your regular round cake pan.

I have made it with gluten free flour and it worked wonderfully. I used an apple, some feijoas and some leftover pineaple and it was really tasty with a bit of ground ginger and pinch of salt. I only put sugar, no cinnamon, on top.

I've made this cake and experimented with it several times since seeing this recipe on the 'Tui' news letter. It has always been a winner with friends and family. My favourite so far has been to replace the apples with chopped up pears, and put in chopped up crystallised ginger in place of the lemon rind. MMMMM Delicious.
