Courgette Fritters

Courgette Fritters

A tasty, simple recipe to make the most of the courgettes growing in your garden, from Helen Jackson.

Ingredients:

  • 4-5 medium courgettes
  • 1/2 cup flour
  • 1/4 cup chopped mint
  • 100 g feta, crumbled
  • 2 eggs, lightly whisked
  • freshly ground black pepper
  • 2 tablespoons olive oil
  1. Grate courgette and place in a colander.
  2. Sprinkle over 1/2 a teaspoon sea salt and leave to drain for 30 minutes.
  3. Press courgettes to remove any excess liquid.
  4. Place courgettes in a bowl with mint, crumbled feta and flour.
  5. Make a well in the centre and add eggs, mix until combined.
  6. Season with freshly ground black pepper.
  7. Heat the oil in a frying pan over a medium heat.
  8. Place spoonfuls of batter into the pan and cook fritters until golden on both sides.
  9. Remove from the pan and drain on paper towels.

  • I added garlic, parmesan cheese(had no Feta), chopped button mushrooms and sage. Very nice too. Guess that makes them not courgette fritters when we start adding to them but that is a hint to what can be added and try. Thanks
