Roast Beetroot and Carrot Salad

A tasty and simple roast vege salad of beetroot and carrots, courtesy of one of the Tui team's mums.

Ingredients:

  • 4 carrots peeled and cut into batons
  • 4 beetroot peeled and cut into batons
  • 2 Tbs balsamic vinegar
  • 2 Tbs olive oil
  • 1 Tbs brown sugar
  • Salt and pepper
  • 1/2 C walnuts
  • Feta to crumble over the top
  • 2 C salad leaves - e.g.: rocket, spinach, beetroot leaves
  1. Set oven to bake, 180C.
  2. Toss beetroot and carrot batons in oil, vinegar and brown sugar.
  3. Spread out beetroot and carrot in a roasting dish and season with salt and pepper.
  4. Roast for 45 minutes.
  5. Put salad greens on a platter and place warm roasted beetroot and carrot on top.
  6. Sprinkle walnuts and feta on top, and serve.

  • Receipe sounds good but if you're pressed for time, grate RAW carrots n beetroot together and mix mayonnaise in. Sometimes a little spiced vinegar as well... a favourite here! We grate raw beetroot in other cabbage salads too . . .
