Why are my cauliflowers tinged pink?

  Bay of Plenty
  September

Q.

Hi, why are my cauliflower heads tinged pink, are they edible? Thanks.

Ann

A.

Hi Ann, when cauliflower heads see too much sun or it is hot they tend to go purple. Cover the heads by folding over the outside leaves to keep the sun off them, use a peg to hold them together, this will keep your cauliflower white. They are safe to eat, and taste the same, if not better, it just isn't how they are sold in supermarkets. Make sure you pick the heads when they are tight, when they start spreading they are going to seed. Lianne.
