Hi, if I plant rhubarb in a pot and am away for a few months over summer, will it survive if I can't get anyone to water it?

Hi Marilyn, it's not likely to survive without water. The crown may survive but there will be no leaves to harvest. Consider a self watering pot which has a water reservoir in the base, that may help for a while but not for prolonged periods of no water.
