Hastings Central School - Radish Dip

Radishes are one of the easiest and quickest crops to grow, and come in a huge range of colours, shapes, sizes and flavours – there is possibly a variety to suit every gardener. While radishes are traditionally a quintessential salad crop, the introduction of oriental varieties in recent years has seen their use increase in cooking and preserving.

Ingredients:

  • Fresh radishes  - 25 small
  • 1 cup   sour cream
  • 1/2 cup of feta cheese
  • 1  tsp   lemon zest
  • 3 tbsp  lemon  juice
  • 1/4 tsp salt
  • Pepper to taste
  • 1/3 cup of  chopped herb - dill, parsley, basil  or other
  1. Wash radishes (unpeeled)
  2. Dice or grate radishes  
  3. Mash feta together sour cream in a large bowl
  4. Add zest and lemon juice, salt & pepper & radishes.
  5. Mix and taste  adjust seasonings.

Serve with small whole radishes, carrot sticks, cucumber, broccoli, rice crackers or roast wedges.
