Ingredients:
- 125g butter
- 100g white sugar
- 75g brown sugar
- 2 large eggs
- 2 mashed bananas*
- 1 tsp baking soda
- 2 tbsp boiling milk (heat in a cup in microwave for 10 second bursts)
- 1 tsp baking powder
- 1 tsp allspice or mixed spice
- 1 tsp vanilla essence
- 225g flour
- Cream butter & sugars in food processor/blender.
- Combine baking soda & milk, and mix to froth them. Add this to blender, along with eggs & defrosted bananas. Blend.
- Mix flour & baking powder, and add to blender. Blend until combined, but do not over-mix.
- Bake in a greased ring tin at 180 degrees C or 350 degrees F for 35-40 minutes.
- Serve warm with custard, or cool & ice with vanilla or cream cheese icing.
* the secret to a lovely moist cake is to freeze your bruised bananas and then defrost them when you feel the urge to make this cake. They keep in the freezer for months. The skins turn black, but don't worry - the bananas are lovely for baking.
