Put your freshly picked basil to good use with Bev's Basil Pesto - perfect with pasta, poured over potatoes or as a flavoursome dip. Thanks to Bev of Canterbury for sharing her recipe with us!
Ingredients
- A couple of handfuls of freshly picked basil leaves
- 1/4 cup cashews
- juice of 1/2 a lemon
- 1 clove garlic
- 1/3 cup grated parmesan
- 1/3 cup lemon rice bran oil or rice bran oil
- Put all ingredients into a food processor and whiz until all ingredients are blended together.

I would love to know how to stop basil pesto going brown in the fridge. I keep mine well sealed but it still goes brown.

You can seal the air out by covering the surface with olive oil or similar oil.

I keep my pesto in the freezer. When I need some I carve a piece off and let it unfreeze. Works well and stays green.

Try smoothing the top of the pesto flat and covering it with a layer of your preferred oil to prevent oxidation.

Could I use good quality coconut oil to pesto please.

I too freeze leftovers in IceCube trays. When frozen put into plastic ziplock bags, and just take out what required when required. I also keep some in the fridge. But once you have put into container or jar with lid on, I turn upside down in fridge. Works every time.
