Cass's Rhubarb and White Chocolate Cake

Cass from the Tui Team has shared her family's recipe for Rhubarb and White Chocolate Cake. Cass's Tip: "I like to leave the rhubarb in chunks and use white choc buttons so you bite into big bits of rhubarb and chocolate!"

Ingredients:

  • 1 1/4 cups of finely chopped uncooked rhubarb
  • 100g of good quality white choc chips
  • 2 1/2 cups of self-raising flour
  • 1 cup of caster sugar
  • 1 teaspoon of vanilla essence
  • 2 eggs, lightly beaten
  • 1/2 cup of plain yoghurt
  • 125g of butter, melted
  1. Combine the rhubarb, chocolate, flour and sugar in one bowl.
  2. Combine the vanilla, egg, yoghurt and butter in another bowl.
  3. Stir the dry and wet ingredients together until just combined.
  4. Bake at 180 degrees Celsius for 1hr or until cooked.

Tip: If the mixture seems quite dry, try adding a little milk.

  • This is the most brilliant cake, such an easy recipe and tastes amazing!! I cut the amount of sugar down to just half a cup. Bc it is sweet enough from the white chocolate.

  • If one wants to ice this cake, what flavour can you suggest, cream cheese, lemon, or anything special???

  • Hi Yvonne, we haven't found it needs icing, we usually give it a quick dust with icing sugar and it is lovely paired with yoghurt. You could try a white chocolate ganache or similar? It would need to be something that went well with the rhubarb and chocolate, cream cheese would possibly be too heavy. We hope you enjoy the cake, Tui Team

  • This cake is absolutely delicious. I added 3/4 cup of milk to it and it worked perfectly just took an extra 10 mins to cook. Make for a dinner out with friends and my husband liked it so much I had to make another one the next day.
