A tasty, simple recipe to make the most of the courgettes growing in your garden, from Helen Jackson.
Ingredients:
- 4-5 medium courgettes
- 1/2 cup flour
- 1/4 cup chopped mint
- 100 g feta, crumbled
- 2 eggs, lightly whisked
- freshly ground black pepper
- 2 tablespoons olive oil
- Grate courgette and place in a colander.
- Sprinkle over 1/2 a teaspoon sea salt and leave to drain for 30 minutes.
- Press courgettes to remove any excess liquid.
- Place courgettes in a bowl with mint, crumbled feta and flour.
- Make a well in the centre and add eggs, mix until combined.
- Season with freshly ground black pepper.
- Heat the oil in a frying pan over a medium heat.
- Place spoonfuls of batter into the pan and cook fritters until golden on both sides.
- Remove from the pan and drain on paper towels.

I added garlic, parmesan cheese(had no Feta), chopped button mushrooms and sage. Very nice too. Guess that makes them not courgette fritters when we start adding to them but that is a hint to what can be added and try. Thanks
