Feijoa and Coconut Cake

Make use of your fresh homegrown feijoas and whip up this delicious feijoa and coconut dessert cake, courtesy of Cass from the Tui Team. 

Best served warm with yoghurt or ice cream. 

Ingredients:

  • 175g softened butter
  • 1 cup sugar
  • 3 eggs
  • 1½ cups flour
  • 2 tsp baking powder
  • ½ cup milk
  • 1¼ cups coconut
  • 5-6 largish feijoas, peeled and diced (approx. 1 - 1 ½ c)
  • ¼ cup sliced almonds
  • 2 tbsp sugar
  1. Lightly grease a 20cm cake tin and pre-heat the oven to 180 degrees celcius.
  2. Cream the butter and sugar together.
  3. Add the eggs one at a time and beat in.
  4. Sift the flour with the baking powder and fold in, alternatiing with the milk.
  5. Fold the coconut and feijoas into the batter.
  6. Pour into the prepared tin, sprinkle the almonds and sugar evenly over the top of the cake.
  7. Bake for 45-50 minutes, or until a skewer inserted into the middle of the cake comes out clean.

  • This is very similar to a Fejoia cake I make. All ingredients the same except instead of coconut and almonds, I put in the same amount of cut up fejoias plus 2 x large raw apples chopped roughly, plus a teaspoon of mixed spice. Makes quite a large cake and can be used as a pudding also. Cheers. Enjoy.

  • I have cooked this twice in the last week. A cake thats worth making. One comment was that it looks and tastes like a proper cake one you would get from Moore Wilson! The first time I cooked it the middle was a little under cooked even though the skewer came out clean, so cooked the second a further 20mins and put a thin knife through the middle to test and it was perfect and very very yummy. A real crowd pleaser. Good way to use feijoa surplus esp the small ones from your tree :o)

  • Have heaps of feijoas. Have you got any recipes that does not contain heaps of sugar. Your Feijoa and Coconut Cake sounds delicious but it has 1 cup of sugar in it. Not only am I a diabetic but also I am losing weight, have already lost 4kgs.

  • Hi Colleen, we haven't tried this but with other recipes it often works if you cut down the amount of sugar e.g. half a cup instead of one cup. If you need more sweetness you could add some honey instead. Thanks, Jenna - Tui Team.

  • Can anyone tell me if the recipe is fresh coconut or canned coconut? Or is it desiccated coconut? One tip for reducing sugar is to replace some of it with chopped up (small) dried dates or figs. I did that recently with my feijoa muffins and also added half a banana (mushed up). The were great : moist and tasty .

    • Hi Delwyn, none of the Tui Team have frozen this cake, it has never made it to the freezer! You can freeze the feijoa pulp until it is required, scoop out 5-6 medium to large feijoas (approximately 1 cup of pulp) and place in resealable plastic bags, freeze until required, thaw and bake.

  • Excellent cake which I have made over and over- I have replaced the the sugar with baking stevia. (A little bit less than a cup for a cup though to prevent the after taste - though my husband loves the stevia taste).
