Summer evening salads take inspiration from a walk around the garden, collecting warm and fragrant produce that needs little work to come together.
Try this warm summer harvest salad recipe shared by Holly, made with simple seasonal ingredients.
ingredients
Salad
- 2 fresh corn cobs
- 2 medium zucchini
- 2 large handfuls of fresh tomatoes
- 50g feta cheese
- Fresh herbs - mint is my favourite but parsley, dill, and garlic chives work great here too
Dressing
- 3 Tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 Tbsp fresh lemon juice or apple cider vinegar
- 1 garlic clove, crushed
- Salt and pepper to season
method
- Slice zucchini and de-husk corn cobs.
- Lightly oil and grill on a BBQ until just tender.
- Slice corn kernels off the cobs and place in a bowl.
- Slice fresh tomatoes, herbs, and toss gently with the dressing.
- Spread into preferred serving dish and crumble over the feta.
