Sauteed Kale

Ingredients

  • 6-8 cups chopped fresh kale, hard stems removed
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, crushed
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon sea salt and freshly ground black pepper
  1. Wash and finely slice kale leaves. Leave to drain well, or pat dry till all moisture is removed.
  2. Heat olive oil in a frying pan.
  3. Add onion and garlic and fry until starting to brown.
  4. Add vinegar and allow to bubble and reduce to a syrup.
  5. Toss kale in onion mixture, cover, and allow kale to wilt.
  6. Serve kale greens sprinkled with sea salt and freshly ground black pepper.
  7. Serve with pork chops or lamb cutlets.
