Ingredients
- 6-8 cups chopped fresh kale, hard stems removed
- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 cloves garlic, crushed
- 1/4 cup balsamic vinegar
- 1/2 teaspoon sea salt and freshly ground black pepper
- Wash and finely slice kale leaves. Leave to drain well, or pat dry till all moisture is removed.
- Heat olive oil in a frying pan.
- Add onion and garlic and fry until starting to brown.
- Add vinegar and allow to bubble and reduce to a syrup.
- Toss kale in onion mixture, cover, and allow kale to wilt.
- Serve kale greens sprinkled with sea salt and freshly ground black pepper.
- Serve with pork chops or lamb cutlets.
