
This courgette brownie recipe shared by Toni @livingtheforkingdream is irresistibly moist, rich in chocolatey goodness, and absolutely delicious — it won’t last long in the cupboard!
It might even help you sneak in some vege goodness for little ones and picky eaters.
Ingredients
- 1 1/2 cups white sugar
- 1/2 cup oil
- 1 tbsp vanilla extract
- 2 cups flour
- 1/2 cup cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 3 cups grated courgette (about 3-4 medium-sized courgettes) – important: do not drain!
- 1 1/4 cups chocolate chips or chopped chocolate
Method
- Preheat the oven to 180°C and line a baking tin with baking paper.
- In a large bowl, mix together the sugar, oil, and vanilla.
- Sift in the flour, cocoa, baking soda, and salt, then stir until combined — the mixture will be crumbly.
- Fold in the grated courgettes and let it sit for 5 minutes.
- Add the chocolate and give it a good mix. If the mixture is still a bit dry, leave it for another 5 minutes and stir again — it should be nice and wet.
- Spoon the mixture into the prepared tin and bake for 25-35 minutes. Test with a skewer — it should come out clean when done.
Pro tip: To conceal the green of the courgette from the kids, peel it before grating and they will never know the hidden veges!
