Toni’s Courgette Brownie

This courgette brownie recipe shared by Toni @livingtheforkingdream is irresistibly moist, rich in chocolatey goodness, and absolutely delicious — it won’t last long in the cupboard! 

It might even help you sneak in some vege goodness for little ones and picky eaters.

Ingredients

  • 1 1/2 cups white sugar
  • 1/2 cup oil
  • 1 tbsp vanilla extract
  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 3 cups grated courgette (about 3-4 medium-sized courgettes) – important: do not drain!
  • 1 1/4 cups chocolate chips or chopped chocolate

Method

  • Preheat the oven to 180°C and line a baking tin with baking paper.
  • In a large bowl, mix together the sugar, oil, and vanilla.
  • Sift in the flour, cocoa, baking soda, and salt, then stir until combined — the mixture will be crumbly.
  • Fold in the grated courgettes and let it sit for 5 minutes.
  • Add the chocolate and give it a good mix. If the mixture is still a bit dry, leave it for another 5 minutes and stir again — it should be nice and wet.
  • Spoon the mixture into the prepared tin and bake for 25-35 minutes. Test with a skewer — it should come out clean when done.

Pro tip: To conceal the green of the courgette from the kids, peel it before grating and they will never know the hidden veges!
