Hi Tui, when (and how) is the best time to prune bay trees in the South Island?

Hi Emily
Not in winter. Wait until spring when the risk of frost has passed, otherwise the new growth is at risk of frost damage, which can lead to disease affecting the tree. Trim back by about one third and prune out any dead wood.
