Got loads of lemons? Make the most of your homegrown harvests with this tasty raw lemon cheesecake slice shared by Emma.
Ingredients
Base
1 cup raw cashews
1 cup desiccated coconut
1 cup pitted dates
Pinch of salt
1 tbs lemon juice
Top layer
1 cup cashews, soaked overnight in water then drained
1/2 cup coconut oil, melted
1/2 cup maple syrup
Zest of 2 lemons
1/4 cup lemon juice
METHOD
- Blend all base ingredients in food processor until they come together.
- Press into a lined slice tin and freeze.
- Blend all top layer ingredients until smooth.
- Pour over base and freeze until set.

Love the flavour of this slice, but the base is crumbly. What does anyone suggest to counteract this, while keeping it vegan friendly?

Hi Vicky, try adding 1 tablespoon to 1/4 cup of coconut oil to the base and see if that binds it together, or soak the dates first and then blend with the rest of the ingredients, it will be trial and error to get the consistency to your liking.
