Trish's Rhubarb Tea Cake

This recipe for Rhubarb Tea Cake was kindly submitted by Trish from Otago in the Summer Harvest Recipe Competition.

Ingredients:

  • 2 C brown sugar
  • 1/2 C oil
  • 2 eggs
  • 1/4 C natural or berry flavoured yoghurt
  • 1 3/4 C sifted flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 C freshly chopped rhubarb (about 3 - 4cm pieces) coated in flour

Topping:

  • 3 tsp brown sugar
  • 3 tsp cinnamon

Trish recommends cooking this cake in a ring tin.

  1. Preheat oven to bake, 180 degrees celsius.
  2. Beat brown sugar and oil well.
  3. Add eggs and yoghurt and beat well.
  4. Add sifted flour, baking soda, cinnamon and rhubarb.
  5. Mix all ingredients together.
  6. Pour into ring tin and bake for approx 1 hour.
  7. When cool, combine brown sugar and cinnamon together and sprinkle over the cooked cake.
  8. Serve with fresh cream or yoghurt.

  • 2 Cups of Brown Sugar seems to me to be exceptionally high. Is this correct. I love Rhubarb and will definitely try this recipe, but would love confirmation that sugar amount is correct. Thanks

  • Can you please tell me what this nasty little weed is and how to dispatch it? It has small leaves similar to a violet's leaves and this network of branching out white tentacles that travel along underground and then produce more of these small leaves.

  • Hi Heather, it sounds like it could be hydrocotyle weed. Try googling 'hydrocotyle weed' and see if the images look the same as what you have. If it is the same, go to your local garden centre or DIY store and they will be able to provide you with a suitable spray.   • Ok I think I have this weed too. Those little white runners suvive long distances under houses to pop up elsewhere and the plant suvives all condidtions including total drought. Unbelieveably Palmers were selling this until a few years ago. I tackle it by putting all parts in rubbish bags. It is very hard to eradicate but you can reduce it, just keep on top of it. all the best!!!

  • No, I know hydrocotyle weed and it is not that. It is a much sturdier plant than that with long white tendrils underground that branch out with a leaf growing up at intervals all along the tendrils. How do I send you photo I will go and photo it now

  • I can understand your concern, however I have been using another recipe that is very similar with the same amount of sugar and similar proportions of the other ingredients. It works and is not too sweet. Actually the use of yoghurt in this recipe sounds as though it would 'mellow' the sugar quantity out quite well. You can only tell by trying it.

  • Did try the recipe with 2 loosely packed cups of sugar and must say it is in the top Five Cakes I have ever made. I added 1/3 cup chopped crystalised ginger. Easy as and Divine.
