Looking for a way to use your pumpkin harvests? Try something different and make a deliciously sweet pumpkin pie with this recipe from Kristine - the winning recipe from our autumn harvest recipe competition!
Ingredients:
Pastry
- 225g flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 115g butter softened
- Cold water and milk to mix
Pie filling
- 1 cup cooked mashed pumpkin (use about 350g raw)
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp ground cloves
- 1 tsp ground ginger
- 1/4 tsp nutmeg
- 3/4 cup brown sugar
- 1 Tbsp golden syrup
- 2 eggs
- 3/4 cup milk
To make pastry:
- Sift flour baking powder and salt.
- Rub in the butter with your fingers.
- Add small amounts of water and milk to make a stiff dough.
- Line a 9" pie dish with the dough.
To make pie filling:
- In a bowl mash pumpkin till lump free.
- Add spices, salt, sugar, golden syrup and stir well.
- In a seperate bowl add the milk and beat in the eggs.
- Mix the egg and milk mixture with the pumpkin mixture.
- Pour the mixture into the pie dish.
- Bake at 220C for 15 minutes then lower temperature to 180C and cook for 30 minutes until set.
Serve with whipped cream!
