Lianne's Feijoa Cake

You can't go wrong with a classic feijoa cake! This delicious recipe was shared by Lianne from the Tui Team. 

Try experimenting with different fruit combinations like feijoa and apple, or summer berries such as blueberries, boysenberries and raspberries.

Ingredients:

  • 2 cups flour
  • ¾ tsp baking soda
  • ¾ tsp salt
  • ½ tsp nutmeg
  • ¾ tsp each of cinnamon and cloves
  • 1 ¼ cups white sugar
  • 1 cup of vegetable oil
  • 2 eggs
  • 1 ½ tsp vanilla essence
  • 1 ½ - 2 cups feijoa flesh, uncooked
  • ¾ cup of chopped walnuts or other nuts (optional)
  • ½ cup flaked almonds for the topping

method

  1. Preheat oven to 180 degrees C fan bake.
  2. Grease and line a 21cm spring form cake pan.
  3. Sieve flour, baking soda, salt and spices in a large bowl.
  4. In another bowl whisk oil and sugar together, then whisk in eggs and vanilla.
  5. Pour wet ingredients into dry ingredients and mix with a wooden spoon until just combined, try not to over mix.
  6. Stir through feijoas (or other fruit) and chopped nuts if adding.
  7. Pour cake into cake pan, sprinkle flaked almonds on top.
  8. Bake for 50 minutes – 1 hour. Check at 50 minutes by inserting a skewer in the centre, if it comes out clean, the cake is cooked.
  9. Cool in the tin for 10 minutes and turn out onto a cake rack.
  10. When cool, dust with icing sugar and serve warm with ice cream or yoghurt. 

Note: Flour can be substituted for self raising flour, but don’t add baking soda. Baking soda can also be substituted with 4 teaspoons of baking powder, but don’t use self raising flour if you do.
